A ‘Mad Hatter’ cake, made to resemble the hat that the birthday girl wore in a school production (so no pressure then!)

Brim of the hat is a chocolate cake and the main body of the cake is vanilla sponge with raspberry jam and vanilla buttercream filling. Cake is covered in a soft fondant and the playing cards and price tag are made of edible wafer paper on fondant icing. The White Rabbit’s pocket watch is made from fondant icing with edible pen and paint to decorate.

The feather is made from three layers of edible wafer paper which was cut to make ‘feathers’ and then held over the steam of a kettle to curl the individual feathers – it was like magic!
